Before I get to the meal plans, though, I thought I'd share a few of my current favourite recipes:
I never refrigerate overnight. The leftover chicken usually gets thrown into tacos or something like that. I also save all of my veggie scraps, onion ends, etc. throughout the week and throw them in with the chicken carcass to make chicken stock.
My favourite variation: spinach, feta & tomato
J's favourite variation: bacon and cheddar
So yummy with raisins and walnuts.
Can you tell I'm trying to make a healthy, filling breakfast every day? It doesn't always happen, but I try. I am also going a little crazy with my crockpot these days. I just hate the 5:00 meltdown-while-I-try-to-prepare-dinner every evening. Plus I never know exactly when Jonathan is going to be home, so it helps me be a little more flexible about when we eat. I also like to make a double batch of dinner when I can and freeze half.
And now, here are the meal plans. Just breakfast and dinner, since I usually manage to scrape something together for Stella and me to eat for lunch. I'm really utilizing the crockpot this week, as I'm hoping to focus on housecleaning and doing fun activities with Stella this week.

D: Valentine's Day (Jonathan cooks!)

Feels good doesn't it? Even if you don't follow your plan exactly, at least you have a plan, and you have a focus and a job first thing in the morning! That was always the most difficult thing - planning and preparing dinner when you and your sister were little. It's always rewarding to see your kids doing better than you! :)

I don't use as many Jalopenos as she suggests, I make double the recipe with 5 peppers. Any hotter and the kids won't eat it. It's nice with brown rice.

Sheena, I love the crockpot blog. :) I haven't tried that recipe though - looks tasty and easy! I'll put it on the menu next week.
Your husband is much more willing to experiment than your dad. That black bean and sweet potato enchilada sounds delicious...but I don't think he'd go for it.

I love your weekly plan! I started planning on Sundays too, but I can only handle dinners so far. I would love to see more of your ideas and exchange yummy recipes!
